Ingredients
Dough
  • 220g icing sugar
  • 200g ground hazelnuts
  • 1-2 egg whites
  • cocoa powder (optional)
  • ground piškoty or rich tea biscuits(enough to make the dough quite hard)
  • 16 piškoty or other round biscuits to use as a base(or buy trifle sponge and cut circles out)
Buttercream
  • 90g butter
  • 60g icing sugar
  • 1 egg yolk
  • rhum to taste
Instructions
  1. Mix all dough ingredients together to a firm dough (adjust egg white and piškoty as necessary). If you want your beehives brown like in the picture, add cocoa too. Put in fridge to rest overnight.
  2. Shape into balls and place one by one into the beehive mould (they should fit in nicely without sticking out too much) – it’s a good idea to dust the inside of the beehive mould with some icing sugar first to prevent the dough sticking to it. Make a hole in the ball and then open the mould out to reveal a perfectly shaped beehive “biscuit”.
  3. Fill with buttercream and cover the bottom with a piškot. Decorate with chocolate or any other way you fancy.
